From Seed to Cup, this is where your next favorite brand of coffee is grown:
For our Light Roast, we use a farm Located in Chalchuapa, Santa Ana, EL Salvador, between 3200 and 3600 feet above sea level, with a span of 153 acres. This farm, Finca Ayutepeque, was founded in 1840 and has been managed by the same family for six generations!
Finca El Manzano is a 172-acre farm located in Chalchuapa, Santa Ana, EL Salvador, between 4200 and 5100 feet above sea level for our medium and dark roasts. It was founded in 1872 and has been managed by the same family for six generations.
As Matt and I discussed, they are hand-harvested, washed, and dried in the Sun, then milled to get the actual bean from inside the coffee cherries.
Cupping is the process of grading our coffees after each harvest and drying. Then, small test batches are roasted and sampled (grades are assigned) for contestant taste profiles.
After which, they are selected and shipped back to the USA to our roasters for handling and to put the final touches on them (roasting) by ordering taste profiles and bagging them up for shipment right to your door!
As you can see (and these are not all of the steps by a long shot), there are many to grow, select, and grade "specialty-grade" coffee like ours for your enjoyment!
